Happy Friday!
I recently received a small raise (hooray!) so my husband and I went for a celebratory dinner at one of our favorite restaurants, Thai Gourmet. The folks who work there are so lovely and the food is so delicious.
An order of lightly crisped veggie springrolls was followed by...
General Tso tofu, one of my favorites. Their sauce is tangy and sweet and spicy and garlicky and amazing. You may also notice some complimentary Thai iced teas in the background :)
A couple of you had asked for the recipe for the cornbread mini muffs. It was adapted from the "Corn Bread Country-Style" recipe in Carol Raymond's Student Vegetarian Cookbook.
Cornbread Mini Muffins
adapted from the Student Vegetarian Cookbook
3/4 cup cornmeal
1 1/4 cup oat flour or whole wheat flour
2-4 tbsp brown sugar
2 tsp baking powder
1/4 tsp salt
1 cup + 2 tbsp* unsweetened almond milk
2 tbsp oil
1 egg replacer or egg
1/4 cup apple butter**
Preheat oven to 425 degrees F.
Combine the cornmeal, flour, sugar, baking powder, and salt in one bowl.
In a liquid measuring cup or medium bowl, combine the milk, oil, and egg replacer.
Pour the wet into the dry and stir until just combined. Pour the mixture into a greased mini muffin tin***, filling each tin about 3/4 full.
Bake for 8-10 minutes, or until lightly golden on top. Using a teaspoon, press little cavities into the top of each muffin and fill with apple butter.
*These 2 tablespoons of milk can also be subbed with oil instead for extra fluffiness. I imagine you could also eliminate the oil altogether, only using milk, but this would probably make it a little chewier.
**Or, if you'd rather have savory, not sweet, then fresh corn, shredded cheddar, sundried tomatoes, or pickled peppers all make great additions.
***Alternately, you can pour the mixture into a greased 9" round pan or cast iron skillet and bake for about 18-20 minutes. Then you can split the wedges and make a grilled cheese :)

I've never actually tried thai food.. I need to get on that.

DeleteI love Pad Thai, but wish it were healthier than what you get out. I make a lighter version at home sometimes though! The cornbread muffins look great! And I'm actually going to cooking cornbread tomorrow for a family dinner. :)
ReplyDeleteDo you have any secrets for a lighter pad thai? We try to use less oil and less sugar. I've heard of using zucchini instead of noodles, which seems like something you might like :)

ReplyDeleteYes, it can be difficult to make Thai food if you don't have access to an Asian grocery store. Our local grocer does carry some curry pastes, though :)
DeleteCongrats on the raise! Those always feel good--not just for the extra money, but to know that your employer recognizers you as a valuable employee! And I LOVE Thai food, but if you can get me to order anything other than red curry, it's an unusual day. I can't get enough of that stuff--and my favorite place makes a red curry...with cashews. LOTS of cashews, tofu and veggies in a creamy, spicy sauce. It's heaven.

Oh, now I want to try that! Squash Thai curry? Might convince me to order something other than cashew curry. Maybe ;)

I have a fear of Thai food. WHAT IF IT HAS FISH SAUCE?!?!??!?! I'm not afraid of muffins though!
ReplyDeleteThe restaurant where I worked did use fish sauce in some of its dishes and people would sometimes ask for it be omitted.
DeleteMaybe I'm extra sensitive to it, but I can always taste when fish sauce has been added. bleh!
you can never go wrong with general tso's - never had a tofu version before, but it sure looks great!
